I know it’s been a while since I’ve posted, I’m a freelancer and my work load has just sky rocketed. I’ve been cooking simple meals and haven’t had the chance to make something unique or fun until today! I recently bought some frozen mussels and had a major craving today. White Wine Mussels With Black tomatoes
Frozen or fresh mussels (14 pieces)
1/2 of a basque fryer pepper
1 mini orange pepper
5-7 mini black tomatoes
1/2 tsp salt
1/2 tsp black pepper
1 tsp paprika
1 bay leaf
1 /2 tsp garlic
1 tbsp olive oil
1/3 cup boiling water
1/2 cup white cooking wine or white wine
In a medium sized wok or deep saucer, heat 1 tbsp olive oil at high heat and add 1/2 tsp of minced garlic and 1 diced shallot and mix. Add in 1/2 tsp of salt and pepper and gradually mix in diced basque pepper, orange pepper and mini black tomatoes. Finally, add in 1 tsp paprika, mix and pour in 1/2 cup of white wine and 1/3 cup of boiling water. Let it boil and add in the mussels and 1 bay leaf. Boil at medium heat for 7-10 mins.
Garnish with fresh copped chives.
