How was everyone’s long Easter weekend? I had an awesome time with the family. We cooked, ate and took a nice walk in a near by forest that my friends call Narnia haha. The best part about this past weekend is that it was sunny and warm!!! After the crazy ice storm weather we had here, sunny and warm is exactly what we all needed.
I’ve been lately craving basil. I think it’s because it’s Spring and I can’t wait to start my herb garden. I eagerly picked up a basil plant and used that to make the pesto. It’s such an amazing feeling to grow something yourself and then cook with it! Very satisfying.
Since I didn’t have any pine nuts, I thought I’d use walnuts instead. 1. they’re cheap 2. healthier and 3. gives more of a nutty taste. It is the perfect lazy meal. All you do is blend and mix. Done!

Walnut Pesto Sauce
1-2 cup basil leaves
1 garlic glove
1/4 cup walnuts
1 tbsp lemon juice
1 1/2 tbsp parmesan cheese
50 ml olive oil (1/5 cup)
- In a food processor, blend/puree together 1 cup of basil leaves, 1 garlic clove, 1/4 cup walnuts, 1 tsp lemon juice and 1 1/2 tbsp parmesan cheese.
- Slowly, pour in olive oil and blend again.
- Mix sauce with fresh al dente pasta and enjoy!
