Anyone secretly obsessed with Chipotle but doesn’t want to admit it? I don’t think it’s a bad thing to be obsessed about, but it makes you automatically basic in this day and age. But let’s be honest, we’re all obsessed with bowls in general. Teriyaki bowls, vegan bowls, all type of bowls!!I just happen to be a huge huge huge fan of Mexican food. It embodies such rich and bold flavours, just like the dance salsa. The movement, the colours, the boldness. The whole Mexican culture is so inspiring and beautiful.
I recently made a decision to transition my diet into a vegan diet. Slowly, not excluding everything. I thought it would be cool to make a burrito bowl using beans as my main protein. Then adding in some fresh notes with some homemade salsa. I add some hints of mango to add sweetness and jalapeños for heat.

Vegan Burrito Bowl
1-2 cups wild rice (cooked)
2-3 mini bell peppers
1/2 red onion
1 cup of caned red beans
1-2 tbsp paprika
1/2 tbsp turmeric
salt and pepper to taste
1 1/2 tsp La grille montreal chicken seasoning
2-4 tbsp water
Salt and pepper
1/2 lemon juice squeezed
- Spray grill or hot pan with oil and fry sliced peppers and onions. Set aside.
- Spray hot pan with oil and toss in red beans and spices and mix. Add water and cook for a few secs. Set aside.
- In a medium sized bowl, chop up all salsa ingredients and add into the bowl. Season with salt, pepper and lemon juice.
- In a bowl, add 2 tbsp of rice, peppers, red beans and salsa. Top with sour cream (optional)
