It almost Valentines Day and what better way to celebrate this day with some cupcakes! If you’re hosting a fun party or making some for your hubby, these cupcakes are perfect.
I wanted this recipe to be simple and a staple. Not complicated food colouring or frosting, just a vanilla cup cake with everyones favourite frosting; cream cheese. But be careful, these are sweet and so good you won’t be able to stop! Vanilla Kisses Cupcakes With Cream Cheese Frosting
Makes 12 cupcakes
2 cups of flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla extract
1 cup sugar
1/2 cup unsalted butter ( at room temperature)
1/2 cup milk
1/4 cup half and half cream
Pinch of salt
12 Chocolate Kisses
1 bar of unsalted butter (around 1 cup of butter)
1 bar of cream cheese
1 cup powdered sugar
2 tbsp half and half cream
Preheat oven to 350 degrees F.
In a medium sized bowl, add 2 cups of flour and 1/2 tsp baking powder and baking soda.
In a mixer, add 2 eggs, 1 cup of sugar, pinch of salt, 1 tsp of vanilla extract and 1/2 cup of butter at room temperature. Mix until smooth. The add in 1/2 cup of milk and 1/4 cup of cream. Mix again.
Once mixed and smooth, add dry ingredients and mix until all ingredients have been well incorporated.
In each cupcake holder, add 1 tbsp of the cupcake batter, and drop a chocolate kiss in the center and close the top with 1/2 tbsp of cupcake batter.
Once finished, give the cupcake tray a good shake and bake in the oven for 25-30 mins until lightly golden.
While the cupcakes bake, start making the frosting.
In a mixer, add in butter, powdered sugar and 2 tbsp of half and half cream. Mix until smooth. Then, add in the cream cheese and mix again. Once smooth, cover and cool in the refrigerator for the remaining time the cupcakes bake.
Let cupcakes cool for about 15-20 mins before adding frosting!
