Hope everyone is having an awesome week! I recently stumbled upon a quote that really spoke to me….
“If it doesn’t challenge you, it doesn’t change you.”
This year I left a great job, a job that payed kinda well, had tons of benefits but wasn’t challenging. I came into work knowing what to do and how to do it. I wasn’t evolving, learning or changing in any way. And for me, to move up in my industry, I need to be challenged. Since I’ve left, I made a promise to myself to do something that scared me and something that was challenging. So I started this blog, it started off as a place for me to store some of my favourite recipes and keep it to myself, until I decided to finally share it with the world. It opened me up. I was no longer afraid of what people thought of my designs, photography and recipes. Because at the end of the day, I was happy. I love blogging, cooking and taking pictures, it’s helped me discover more of what I can do. The challenging part of having this blog is be creative with recipes, making sure it tastes good and taking photos. But, those are some new skills that I can now add into my resume! So there you go guys, challenge yourself and open yourself to other opportunities.
As for the recipe haha – I’ll be sharing a quick Tuna Salad that is supa healthy and perfect for summer! Have fun and let me know how this quote relates to you?
Tuna Salad In A Creamy Avocado Sauce
1 can flaked tuna (in water)
Salt and pepper to taste
1/2 tsp chia seeds
Boston lettuce cups (optional)
1 tsp mayo
1 garlic clove
1 tbsp olive oil
1 tsp red wine vinegar
- In a medium bowl, combine diced apple, cucumber and onion.
- Add in flaked tuna and chopped cilantro. Season with salt, pepper and sprinkle with chia seeds.
- In a blender or food processor, blend together avocado, mayo, garlic, olive oil and red wine vinegar. Blend until creamy.
- Pour dressing on top of salad and mix.
- Serve salad on top of a Boston lettuce cup and garnish with chia seeds.
