This snow day were having in Ontario is making today, super lazy. Anyone else just want to be home watching Netflix with a nice meal? I know I do. I’m currently watching this TV show called “Shadowhunters” which is a book series. If you’re into drama, fantasy and action and maybe just a tad bit of romance (actually a lot of romance haha) then you’ll love this show.
These Sweet Potato Gnocchi sound fancy and super complicated but they’re actually super easy to make and fun! I know they’re usually made with regular potatoes or even without but I wanted a little bit of natural sweetness that sweet potatoes give. These turned out so fluffy and pillow like that just instantly melt in your mouth.

Sweet Potato Gnocchi
1 sweet potato (fairly large)
1 tbsp Parmesan cheese
Salt and pepper to taste
1 1/2 cup of flour (or more)
1 tbsp olive oil
knob of butter
Salt and pepper to taste
1/2 tbsp fresh rosemary
Sprinkle of Italian seasoning
1/3 cup of white wine
Heat water in a pot at high heat and add a few dashes of salt. Once boiling, add in peeled/cubed sweet potato and cook at medium heat for 20 mins.
Once sweet potato is soft. Drain and let them cool for around 10 mins of just rinse under cold water.
Place you cooked sweet potato on a large cutting board and mash with your hands or a fork and get it to a soft consistency.
Heat more water in a pot at high heat and a few dashes of salt.
You want to create a small dome out of the sweet potato and crack an egg in the middle and add salt, pepper and parmesan cheese.
Start by folding in the sweet potato and mixing all the ingredients together.
Slowly, add in the flour. Keep adding until dough becomes soft but firm.
Form the dough into a ball and cut into strips. Start by rolling out each strip and cutting into small rectangle pillow pieces. Before you start forming the Gnocchi, you want to lightly sprinkle with more flour so it’s not sticky.
Then, with a fork, you want to roll the pillow down with your thumb. Using the back of the fork, rolling from middle of the fork to tip.
Then toss them in the boiling water and cook until the Gnocchi is floating at the top (around 3 mins)
In a frying pan, heat 1 tbsp of olive oil and knob of butter at high heat
Once heated, toss in the Gnocchi and start frying and mixing.
Add in some salt and pepper and keep mixing. Making sure the Gnocchi doesn’t burn.
Then, add in some fresh rosemary and Italian seasoning and start tossing the Gnocchi around mixing all the ingredients together.
Lastly, add in the white wine and cook for 1-2 mins and you’re done!
Garnish with fresh Parmesan cheese!
