Hope you all had an amazing weekend. I had a pretty busy weekend. I went for brunch with a good friend, got my dog a haircut and did a lot of grocery and recipe prep shopping. I always love a weekend when I have things to get done. It makes me feel organized and sort of in charge of my life.
This week, I will be sharing some awesome St. Patricks Day recipes. Today, I’ve got these delicious Sweet Jalapeño-Cilantro-Lime Chicken Wings. O-M-GOSH, these turned out even better then in my head. I had this whole idea of making a fully green marinade to go with the theme. If you love spicy, sweet, tangy and fresh foods, then this is your jammmmm!
Sweet Jalapeño-Cilantro-Lime Chicken Wings
20-30 raw chicken wings
4 Jalapeños (seeds removed)
Salt and pepper to taste
1/2 tbsp garlic powder
1 tbsp paprika
1 cup cilantro
1 lime (juice)
1/2 cup apple cider
2 tbsp soya sauce
1/4 cup of sugar
1/4 cup ketchup
1 tbsp cornstarch
In a large bowl, place 20-30 raw/washed chicken wings. Season with salt, pepper, garlic powder and paprika. Set aside.
Chop 1 onion, 4 jalapeños (seeds removed) and mix with the chicken wings. Set aside for 30 mins.
Preheat oven to 425 degrees F. Place a piece s parchment sheet on a baking pan.
Place chicken wings on a baking pan (leaving onions and jalapeños set aside) and cook each side for 20 mins and then flip and cook the other side for 15/20 mins.
In a food processor, chop and puree 1 cup of cilantro, the chopped onions /jalapeños from the marinade, 1 lime squeezed, 1/2 cup of apple cider, 2 tbsp soya sauce, 1/4 cup sugar and 1/4 cup of ketchup.
In a medium to large deep pan, heat cilantro sauce at high heat. Once bubbling, reduce to medium heat and add in 1 tbsp of cornstarch and mix for 1 -2 mins.
Place cooked chicken wings in a deep baking pan, pour over with cilantro sauce and bake at 420 degrees F for 15-20 mins.
Garnish with fresh chopped jalapeños and cilantro.
