Happy Friday! I hope you are enjoying the weather, that you are safe and loved. As much as I want to stay positive, I’m constantly reminded of the events happening around the world. I just want to take this time to constantly preach love, strength and togetherness.
Since it’s summer and humid as hell, I really wanted to share one of my favourite summer salads that is delicious and refreshing. Bocconcini, which is just mozzarella but small, are one of my favourite things to add into my salads. They’re bite size, easy to quickly toss into a salad and just so so so good. One trick I like to use when making a summer salad is to add mint. Mint is a cooling and refreshing ingredient used in cold cocktails and drinks so, why not add some to your salad!

Summer Bocconcini Salad
1 cup bocconcini
1 cup cherry tomatoes
Salt and pepper to taste
2 tbsp olive oil
1 tbsp chopped fresh mint
- In a large bowl, add 1 cup of bocconcini, 1 cup sliced in half cherry tomatoes and 1 chopped cucumber (skin peeled).
- Season salad with salt and pepper, drizzle with olive oil and finish off with a sprinkle of fresh chopped mint. Mix and enjoy!
