We are half way to the weekend and 8 days more days till St. Patricks Day. The weather to day is to die for, it’s finally warm and the snow is pretty much all gone. It is going to rain but, I like rainy weather, I feel more productive and calm.
This recipe is the perfect recipe for your kids/teens. If they’re not getting enough vitamins from vegetables, this is an amazing way to sneak them in and still tastes good. Pureeing the broccoli into the mashed potatoes, masks the flavour of broccoli but adds an even better taste to the potatoes. My brother, who hates all types of veggies but green peas, corn and tomatoes was shocked when I told him he just ate some broccoli because he has 2 servings and was craving more.
It’s also such a fun recipe to make for St. Patricks Day because of the green colour and makes you happy eating something in a fun colour. Hope you guys enjoy and be sure to share with your friends and family!
St. Patrick’s Pie
8 medium sized potatoes
Black pepper to taste
1 1/2 cup of broccoli florets
1 tbsp water
1/4 cup half and half cream
1 1/2 cup of ground beef
1/2 tbsp salt
1/2 tsp black pepper
1 tbsp canola oil
1/2 cup frozen green peas
Start by boiling water (enough to fit potatoes) in a large pot at high heat, add 1 tbsp of salt and let it simmer.
Then, peel potatoes, wash and cut into medium-small sized pieces. Throw them into the boiling water and simmer at medium heat (6) for 20 mins.
In a medium sized bowl, mix ground beef, salt, black pepper and canola oil. Mix well.
In a food processor, chop.mince 1 onion. Put the onion into the beef mixture and 1/2 cup of frozen green peas mixing all ingredients together.
In a large deep baking pan, spread beef mixture evenly, making sure theres no empty spots.
Preheat oven to 420 degrees F.
Drain finished potatoes and place potatoes into a medium sized bowl. Set aside.
In a large ceramic bowl, place 1 1/2 cup of broccoli florets and 1 tbsp of water and cook in the microwave for 4 mins.
While the broccoli is cooking, start by mashing up the potatoes. Once fully mashed, add in some black pepper.
once the broccoli is ready, in a food processor, puree the broccoli and slowly pour in 1/4 cup of half and half cream.
Add the broccoli puree into the mashed potatoes and mix all the ingredients together.
Pour the mashed potatoes on top of the beef mixture and spread evenly. Sprinkle the top with some shredded cheese and bake in the oven for 30 mins.
Garnish with green onions and try it with Sriracha, you’ll thank me later.
