Hope you’re having an awesome week. Today, I’ve got a recipe that my mother taught me to make years ago. It’s super easy and so light and delicious.
We call these meatballs porcupines because when fully cooked, the rice inside the meatballs come sticking out, like a porcupine. So fun right? Keep following my #ChristmasCollabWithFafa till Christmas day. I’m having so much fun doing these.
Porcupine Meatballs With Roasted Veggies
1 1/2 pounds ground beef
3 -4 cranks of black pepper
5-6 cranks of salt
1 cup cooked or raw rice
1 tbsp butter
2 tbsp canola oil
3 cranks of black pepper
5 cranks of salt
1 tsp beef broth powder
2-3 cups boiling water
4 mini bell peppers (red, orange, yellow)
2 tbsp olive oil
4-5 cranks of salt
1 1/2 tsp Mrs. Dash
Preheat oven to 425 degrees F.
Start by chopping 1/2 onion, sliced carrots into strips and set aside. In a large deep skillet at high heat, add 2 tbsp of canola oil and 1 tbsp of butter. Once heated, add the onions and carrots, cook and mix for 5 mins.
Add 3 cranks of black pepper and 5 cranks of salt and cook for 2 more minutes. Once golden, pour in 2-3 cups of boiling water and 1 tsp of beef broth powder. Once boiling, taste for flavour and add more salt if needed. Turn off heat and set broth aside.
In a large bowl, mix 1 1/2 pound ground beef, 1/2 diced onion, 1 egg, 3-4 cranks of black pepper and salt. Mix all ingredients together. Add 1 cup of cooked or raw rice and mix again.
Bring broth back to boil. Start by rolling ground beef mixture into medium sized balls, add to broth. Once all meatballs have been rolled into balls, cook at medium heat for 20 mins.
While the meatballs are cooking. Start by chopping 2-3 skinless potatoes, 1 zucchini, 4 mini bell peppers (red,orange,yellow) and 1/2 onion. Add veggies into a large bowl, add 2 tbsp olive oil, 4-5 cranks of salt, 1 1/2 tsp of Mrs. Dash. Mix all veggies together and pour onto a baking sheet. Cook in the oven for 25 mins. Once cooked, sprinkle 2 fresh grated garlic on top, mix and enjoy!
Pairs perfect with mashed potatoes.
