Today I have a super simple and super healthy recipe. The chicken is made with just three simple ingredients: lemon, Mrs. Dash and black pepper! Now, usually coleslaw is high in fats, high in calories and just very heavy. My coleslaw recipe is fun, light and super delicious! Enjoy the recipe and have fun cooking! Light Grilled Lemon Chicken With A Side Of Coleslaw
3 chicken thighs or chicken breasts
1/3 tbsp black pepper
1 tbsp Mrs. Dash
1/2 yellow or green zucchini
1/3 cup of diced broccoli
1/4 cup of kale
1/3 cup of raisins
1/4 cup of diced walnuts
1 tbsp sour cream
1 tsp olive oil mayo
1/2 tbsp honey mustard
1/4 tbsp black pepper
In a small bowl, add in the chicken thighs and drizzle with 1/2 a lemon, add 1/3 tbsp black pepper and everyones favourite, Mrs. Dash. Heat your grill pan or real grill and start cooking the chicken thighs staring at high heat and then slowly grilling at medium heat. While grilling, top with a lemon slice for extra taste and cooking until golden.
In a medium bowl, shred, slice or grate the carrot and zucchini very thin. Add in the 1/4 cup kale, 1/3 diced broccoli, raisins and walnuts and set aside. In a small bowl, add your sour cream, mayo, honey mustard and black pepper and whisk until creamy. Drizzle the dressing in the salad and serve!
