Happy Wednesday, we are half way through the week!
Christmas dinner has always been my favourite time of the holiday. Everyone sits down, enjoys the food and just has a good time. Like every other family, everyone cooks a feast. Everything from baked chicken, turkey, ham, pies..etc. The next day, we’re left with so many leftovers, and eating the same thing for weeks can be dreadful.
Today, I’ve got a fun recipe you can make from your leftover chicken/turkey and salads. Thanks for following my #ChristmasCollabWithFafa, there’s more to come!
Leftover Christmas Sliders
Burger buns (mine are homemade, recipe here)
1 pound of leftover chicken or turkey (pulled apart)
1/2 cup ketchup
1 tsp Worcestershire sauce
2 tbsp Nonna Pia’s Balsamic Reduction in strawberry fig
1/4 cup water
2 tbsp honey
3 cranks of black pepper
3 cranks of salt
1 tsp paprika
1 tsp turmeric
Leftover coleslaw or any cream based salad
In a medium sized saucer, add leftover chicken and chopped onion.
In a medium bowl, whisk together, ketchup, Worcestershire sauce, balsamic strawberry reduction, honey, turmeric, paprika, black pepper, salt and water.
Pour sauce into saucer with chicken and mix. Heat saucer at high heat until boiling, then simmer at low heat for 20 mins.
Get buns ready, add your cooked and pulled chicken, leftover salad and enjoy!
