Do you love thai food? Cuz I’m obsessed. Every time I got to a Thai restaurant, I always have to order Grilled Peanut Chicken Skewers. They’re savoury, light, sweet, nutty and full of deliciousness. They go perfectly with a bed of steaming white rice or a simple salad.
I have been craving these for weeks now and just didn’t have the chance to go out to a restaurant. So, I came up with a recipe of my own that tastes almost exactly like the restaurants (only better haha). Hope you guys enjoy this recipe and have a Thai inspired night!
Grilled peanut chicken skewers
4 chicken thighs + wooden skewers
2 1/2 tbsp peanut butter
1 tbsp soya sauce
1/2 tsp sesame oil (or more if you like)
1/4 tsp rice vinegar
2 1/4 tbsp honey
1/4 tsp garlic powder
Canola oil spray
In a medium sized bowl, mix together peanut butter, soya sauce, sesame oil, rice vinegar, honey, garlic powder and chilli flakes. Mix all ingredients together.
cut chicken thighs into strips and place into the bowl with the sauce. Mix the sauce with the chicken well. Once mixed, start by pulling chicken threw the wooden skewers.
Heat your grill or panini press and spray the grill thoroughly with the canola oil spray.
Once heated, cook your chicken skewers for 5-7 mins each side or until golden and no longer pink inside.
