Today I got a more of a asian traditional Christmas recipe for you. I’m from Kazakhstan and mixed with Muslim Chinese so, our Christmas dinners are always asian/middle eastern inspired.
This dish, is so good you will be making this not only for the holidays but for just an everyday meal. It’s simple, easy and very inexpensive, we literally just toss all the leftover veggies and voila!

Glass Noodles Stir Fry Salad
1/2 pound Sweet Potato Starch Noodles (Glass Noodles)
1/2 cup chopped bell peppers
1/2 cup dried shiitake mushrooms
1/2 cup shredded zucchini
1/2 cup shredded carrots
1 bunch of bok choy
1/3 cup chopped eggplant
1 sliced onion
1 tbsp minced garlic
1-2 tbsp canola oil
1/4 cup soya sauce
5 tbsp vinegar
1-2 tbsp salt
In a medium sized pot, add in your glass noodles and boil water at high heat. Once boiling, turn heat to medium and cook for 7-8 mins. Rinse and set aside.
In a small bowl with water, add 1/2 cup of dried shiitake mushrooms, set aside and let it sit for 5 mins.
In a large wok at high heat, add 1-2 tbsp canola oil. Start by frying 1 sliced onion, bell peppers, zucchini, carrots, bok choy and eggplant. Add 1-2 tbsp of salt and fry for 5 mins. Add minced garlic and shiitake mushrooms and fry for another min and set aside.
In a large bowl, add glass noodles and stir-fry. Mix all ingredients together. Pour in 1/4 cup of soya sauce, 5 tbsp vinegar and mix again.
Grab your chopsticks and enjoy!
