Hey there foodies,
This recipe came so random to me, I wanted something different, savoury and sort of sweet. Weird right? So I was like okay, we can do some avocado, an egg and maybe a fresh tomato salsa, and bam I had one delicious breakfast.
I also added a drizzle of my all time favourite balsamic sauce from the one and only Nonna Pia! They make this strawberry fig flavour that just gives this breakfast the sweet kick that it needed. Trust me, you will love this sandwich as much as I did!!!!!
Eggcellent Breakfast Sandwich
1 egg (sunny side up)
1 tbsp olive oil
1 tsp olive oil
1 piece of sliced bread of your choice ( I used french loaf)
5 slices of avocado
1/2 tomato (diced)
1 tbsp onion (diced)
1 tbsp cilantro (diced)
Squeezed lemon juice
Salt and pepper to taste

Toast your bread in a toaster at medium heat so it’s slightly golden.
Start by dicing up the onion, tomato and cilantro. Add the diced ingredients into a small bowl. Add salt and pepper to taste, 1 squeeze of a lemon and 1 tsp of olive oil. Mix everything together.
Heat 1 tbsp of olive oil at medium heat. Crack open on egg and fry sunny side up. Check out how to make the perfect sunny side up egg here.
While your egg is frying, cut open an avocado and slice a few pieces.
Place the sliced avocado on top of the toast, the sunny side up egg, sprinkle with the salsa and top it off with a drizzle of Nonna Pia’s Balsamic Reduction in Strawberry Fig.
