Today, I’ve got an awesome and healthy recipe for you. It looks hard to make but is actually super easy! Lately, I’ve been going through a veggie craze (which is a good thing!). I love to do a quick veggie stir fry, add it to my rice and even to my morning smoothies.
Not only are they delicious, they’re super good for your sight, mind and soul.

Cottage Cheese Stuffed Tomatoes
4 large tomatoes
2 1/2 cups of cottage cheese
1 red bell pepper
1 cup baby spinach leaves
Salt and pepper to taste
1 tbsp olive oil
Preheat oven to 420 degrees F.
In a small bowl, mix together 2 1/2 cups of cottage cheese, 1 diced bell pepper, and 1 cup of chopped spinach leaves.
Give it a good mix and add salt, pepper and olive oil. Set filling aside.
Take the tomatoes and cut the tops off (set tops aside, you’ll need them late). With a spoon, start scooping out the insides of the tomatoes into a separate bowl.
You can add these tomatoes to your mixture or save it later for a different recipe (tomato sauce, salad..etc).
Scoop 3 tbsp or more of the filling into each tomato until fully stuffed. Close tomato with top and place on a baking sheet.
Lastly, drizzled with more olive oil (optional) and bake for 20 mins.
Enjoy with sour cream or your favourite hot sauce!
