My mother has this amazing cookie recipe that she makes every Christmas while she tells me stories about my grandparents during the Soviet Union. How back in the day, life was very different and not so great for people living in Europe and northern Asia.
This month is not only about being with family and friends, but it’s to be thankful for the life you have and the good people that surround you. My mother is always reminding me to be open minded, kind and thankful.
This recipe she shares, is a recipe my grand grand grand parents have made for generations. It’s a traditional family recipe made with using simple ingredients. Enjoy and Happy Holidays!
Cottage Cheese And Sugar Cookies
2 cups cottage cheese
5 eggs (set 1 egg aside for garnish)
1 cup butter (room temp)
2 cup sugar (1 cup for garnish)
3 cups flour
1 tbsp baking soda
Preheat oven at 400 degrees F.
In a mixer, mix 4 eggs, 1 cup soft butter, 1 cup sugar, 1 tbsp baking soda and 2 cups of cottage cheese. Mix for about 5 mins until all ingredients are mixed well.
Start by gradually adding in 3 cups of flour. Mix until dough like texture.
Remove from mixer and on to a large cutting board or hard surface. Sprinkle some flour on to your surface. Knead the dough with some flour to soften and cut into 3 balls.
In a small bowl, whisk 1 egg and in a small plate, pour 1 cup of sugar.
Take the first ball of dough and roll it our into a pizza like circle. Using a circle cookie cutter or the back of a cup, make some cut out circles. Brush one side of the circle in egg mixture and then dip into the sugar mixture. Fold the circle in half. Brush the top of the folded cookie with some egg and dip into the sugar again, place on a backing sheet. Repeat with the rest!
Bake cookies for about 15 mins until golden. Enjoy!
