It’s finally Friday! The weekend is here and the weather is going to be perfect, sunny and warm. Who doesn’t love butter cookies? I love them for all occasions. Christmas, Thanksgiving, Valentines Day, Easter, St. Patricks Day. They work for everything and are perfect with a cup of tea.
These cookies are so soft and buttery, they will melt at every bite. I added some citrus hints to make these cookies a little more unique and give it that citrus punch. It give the ordinary cookie a little lemon and lime love. I not only used the juice of the lemon but I used add in some zest and some lime zest. The sweetness of the cookie will compliment the tartness of the zest and make this recipe irresistible!

Citrus Butter Cookies
30-45 small round cookies
2/3 cups of sugar
1 tsp vanilla extract
1 tbsp lemon
1 1/2 tbsp lemon zest
1 cup soft butter (1 thin stick)
1 3/3 cup of flour
1 lime (zest)
In a mixer, mix 1 egg, add 2/3 cup of sugar, 1 tsp of vanilla extract, 1 tbsp of lemon juice and 1 tbsp of lemon zest. Once smooth, add in the butter and mix until the butter is no longer crumbly.
Slowly start by adding 3/3 cup of flour and mixing until all the ingredients mixed together and are soft like dough texture. Remove the cookie dough and from into a round shape, wrap in saran wrap and place in the fridge for 1 hour.
Preheat oven to 375 degrees F.
Grate some zest from 1 lime and place it on a plate and set aside.
Remove dough from the fridge and cut dough in half and place the other half into the fridge.
Start by rolling out dough into a thin oval. Sprinkle some of the lime zest on top of the oval and give the dough a light roll.
Then, with a cookie cutter or the top of a cup, cut out your cookies. Place cookies on a wax paper and bake in the oven for 15 mins.
