Who doesn’t love a good stir-fry? This recipe is healthy, low in sodium and most importantly, quick.
One of the main sauce ingredients called “Nonna Pia’s Balsamic Reduction”, has become one of my all time favourites. It’s a delicious way to add flavour into your everyday meals without feeling guilty. My favourite Nonna Pia flavour is the Strawberry Fig, it’s sweet, tangy and works amazing with this stir-fry.
Chicken And Veggie Stir-Fry
2 tbsp olive oil to fry
4 chicken thighs or chicken breasts
1/2 yellow zucchini
1/2 cup of garlic scapes
1/3 cup of broccoli
1 tbsp Nonna Pia’s Balsamic Reduction in Strawberry Fig
1 tbsp soya sauce
1 tsp sesame oil
1 tbsp honey
1 tsp chilli flakes for some heat (optional)
Dice chicken and veggies into small pieces and put aside.
Heat 2 tablespoons of olive oil in a large skillet or wok over medium-high heat. Add in the diced chicken and stir until golden.
Add in your diced veggies and stir. While the chicken and veggies cook, in a small bowl, add in Nonna Pia’s Balsamic reduction, soya sauce, sesame oil, honey and chilli flakes and whisk until all ingredients are mixed well. Add the sauce and continue to cook for 3-5 mins. Enjoy!
Serve with fresh white rice.
