Today I changed up my regular veggie and egg breakfast, with some delicious and nutritious carrot patties. These patties are super easy to make, low in sodium and made with no flour. Enjoy and don’t forget to use #CookingWithFafa if you ever try these recipes, I would love to see them!
Breakfast Carrot Patties
2 carrots peeled
2 tbsp soya sauce
1/2 cup of oats blended until powdered
1/2 tbsp black pepper
In a medium bowl, start by shredding the carrots. Then, add 1 egg, black pepper, soya sauce and mix well. In a food processor, add in 1/2 cup of oats and blend until powered. Add the powdered oats in with the carrots and mix.
Heat the grill pan at high – medium heat and shape your carrot mix into small patties. Grill each side for about 5 mins or until golden. Once you’re done grilling, put the patties on a plate and into the microwave for 2 mins to cook the carrots through.
Eat these bad boys with some low-fat sour cream or my favourite, Greek yogurt!
