It’s sunny, warm and the flowers are starting to bloom! I think it’s finally spring here in Ontario. I can’t wait till the weekend so we can have a nice family BBQ. Anddddd don’t worry, i’ll share some of my favourite BBQ recipes.
Since I’m currently trying to get my beach bod. I have been eating healthy and clean. My go to side dish is just some baked veggies. This recipe is easy, quick, simple, healthy and most importantly, delicious! When king oyster mushrooms are cooked, they become so sweet, soft and delicate. They literally melt in your mouth. The cauliflower taste best when a little crunchy. This gives you side dish some needed texture from the soft mushroom.
Not only do these two compliment each other well. These two veggies work with every protein. Either chicken, beef, lamb, fish..etc, you are guaranteed a delicious side dish.
Baked King Oyster Mushrooms & Crunchy Cauliflower
1-2 king oyster mushrooms
1-2 cups cauliflower
Drizzle of olive oil
Salt and pepper to taste
1-2 tsp garlic powder
1/2 tsp paprika
- Preheat oven to 350 degrees F.
- Wash veggies.
- Start by slicing king mushrooms into thin slices, breaking cauliflower into medium sized bites.
- Transfer veggies into a medium-large sized bowl and add a drizzle of olive oil, salt and pepper, garlic powder, paprika and thyme.
- Mix veggies and place on a baking pan.
- Bake for 15-20 mins.
