Happy Sunday! Today for dinner, I had a delicious meal of stuffed baked chicken with a side of asparagus stir-fry in a white wine sauce. The main ingredient in this recipe is asparagus. Asparagus is filled with so many nutrients. It’s filled with fibre, folate and tons of vitamins that make your body stronger! Asparagus Stuffed Chicken And Stir-fry
10-15 asparagus sticks (ends cut)
1/2 cup of kale
2 strips of turkey bacon
1/2 tsp diced garlic
1 tbsp olive oil
1/4 cup white wine
Preheat the oven to 425 degrees F. In a small bowl, mix 1 tbsp dijon mustard, 1 tsp mayo, 1/2 tbsp honey and 1 tsp of Mrs. Dash. Mix the sauce well until creamy and brush both chicken thighs/breasts thoroughly. Slightly slice chicken in half but not fully slicing through. Cut the asparagus stick ends, brush in olive oil and stuff inside the chicken thighs/ breasts. Take the remaining olive oil and slightly drizzle on top and into the oven for 20-30 mins or until golden.
